Recipe: Oatmeal Cake

You must make this cake!
I brought it to a dinner party this weekend and it was a hit.

Oatmeal Cake Ingredients
1 Cup regular or quick cooking oats
1 1/2 Cups boiling water
1 Cup packed brown sugar
1 Cup sugar
1/2 Cup unsalted butter
2 eggs
1 Tsp vanilla
1 1/2 Cup flour
1 Tsp baking soda
1 Tsp cinnamon
1/2 Tsp salt

Preheat the oven to 350 degrees.

Pour boiling water over oats, set aside.


Cream together sugars, butter, eggs and vanilla.


Add all dry ingredients and mix.


Add oatmeal and stir.


Pour into a greased 9x13 pan. Bake for 30 min.


Let cake cool.


Brown Butter Icing Ingredients
1 Stick of unsalted butter
1 Cup packed brown sugar
1 or 2 Tbsp milk


Mix with electric mixer until fluffy.


Spread on cooked cake and broil for 3 minutes (watch it or it will burn!!)

Serve with a scoop of vanilla ice cream.  This isn't the prettiest cake, but it is so amazingly tasty and moist.
A great fall or winter dessert!
